Step 1: Brew coffee.


To prepare our brownie in the dough, we will add not just water, but freshly brewed strong coffee. This will give the finished cakes a wonderful aroma and taste. So, in order to brew good coffee, pour the finely ground coffee beans into the bottom of the Turks and pour clean water. Put everything on the stove and cook on a preheated stove, over low heat. The trick of this process is to prevent the drink from boiling, but bring it to a state where it is about to begin to boil. Do not let your coffee run away, remove it from the heat in time and strain through a strainer into a glass to remove the remaining coffee beans from the drink.

Step 2: We drown chocolate.


While the coffee cools, melt the chocolate. To do this, build a steam bath. Pour about two to three liters of water into the pan, and place a bowl of a suitable size on top, so that it does not fall into the inside and is not too large. Hand crumble the chocolate into small pieces and pour into a bowl, adding butter there as well. While cooking, stir the chocolate mass and bring it to a liquid state. As soon as all the chocolate has melted and the mass becomes homogeneous, the process is completed, proceed to the next stage of cooking.

Step 3: Knead the dough.


1/2 part mix all melted chocolate with flour and sugar, as well as break the chicken eggs and pour in freshly brewed black coffee. Stir the dough until you break all the flour lumps. As a result, you should get a homogeneous mass evenly colored in chocolate brown, liquid in its consistency.

Step 4: Cooking the curd filling.


In another deep plate, mix the curd filling for our pie. To do this, lay the cottage cheese on its bottom and fill it with milk, and also add an egg there. Mix everything with a mixer, as well as chocolate dough before. And again, you get a homogeneous, creamy mass, but this time a snow-white color.
If you are a big sweet tooth, then you can first mix the egg with a little powdered sugar, and then add the cottage cheese and milk. But for my taste, the cake is so sweet enough that I usually don’t sweeten the curd filling anymore.

Step 5: Form and bake the cake.


You have prepared all the ingredients, which means that the time has come for the main stage of cooking. Choose a rectangular baking sheet to maintain the classic look of brownie, but you can use any other geometric shape and give the dessert a different shape. Lubricate the dishes with a small amount of butter and pour the chocolate dough to the bottom, but not all, but only half or three quarters of the entire mass. Then put the curd mass on top and smooth everything with a spatula. Now fill everything on top with another, already thin layer of chocolate dough. Preheat the oven to 180 degrees and bake the cake for 20 minutes.

Once the brownie is cooked in the oven, remove it and cool to room temperature. In the meantime, heat the remaining melted chocolate to make it liquid again. When the cake has cooled, cover its top with melted chocolate and butter and send everything right in the form to cool in the refrigerator until the hardened chocolate crust forms. That is, approximately 1-1.5 hours.
Attention: as can be seen in the photo, I did not make the second layer of chocolate dough, and then poured the chocolate directly onto the curd filling. The difference is almost not noticeable, but at the cut the cake looks more appetizing. You can also draw chocolate dough on top of the curd filling, simply laying out the dough in small portions and making stains with a fork, toothpick or knife.

Step 6: Serve the brownies with cottage cheese.


Cut brownie with cottage cheese into rectangular pieces and spread on a dish. These are the delicious chocolate brownies you have made. Brew strong tea to them and make black coffee, and then immediately start the meal.
