Meatballs, potatoes and carrots in tomato sauce!

All you need for a tasty dinner are 2 potatoes, 2 carrots and some meat. An economical recipe for a dish to everyone's liking!

INGREDIENT:

METHOD OF PREPARATION:

1. Pass the carrot through the medium grater and transfer it to the strainer.

2. Pass the potatoes through a large grater and add them over the carrot.

3. Drain the juice vegetables and add them to the minced meat dish.

4. Add the garlic given through the press, salt, black pepper, basil and smoked paprika. Mix the mince very well.

5. Shape the meatballs to the desired size, but we recommend that you make them large because they are tastier. We got 10 meatballs.

6. Heat the pan with oil and fry the meatballs over medium heat for 2-3 minutes on each side. They don't need to be ready, they just need to keep their shape well and be rosy.

7. Cut the onion into small pieces and fry it on the pan with a little oil until golden.

8. Add the tomato paste to the glass of water and mix well.

Advice. You can use 1 glass of quality tomato juice.

9. Pour the mixture into the onion pan, add the cream and season the sauce to taste with salt and your favorite spices (Italian herbs).

10. Transfer the meatballs to the sauce pan, place the lid on and simmer for 30 minutes on low heat.

Sprinkle the meatballs with chopped greens and serve. We are sure that the family will appreciate the delicious result! Along with a salad of vegetables, you don't even need a garnish! For new tastes, you can experiment with the sauce, which can be with cooking cream or mushrooms.


Potato fasting meatballs & # 8211 recipe

Ingredients

• 4 large potatoes
• 1 onion
• 1 carrot
• 1 tablespoon of pepper paste / donuts
• 1 bunch of parsley
• ½ teaspoon of dill
• 1 slice of old bread

Preparation

Wash the potatoes well, as you will boil them in their skins. After they have softened and the fork penetrates easily through them, rinse them with cold water and after they have cooled, peel them.

Put the large grater in a large bowl. Add the carrot, cleaned and put on a grater, and the onion, peeled and finely chopped.

Put the slice of bread in a bowl of water to soften a little. Squeeze the excess and add it over the other ingredients. Add salt, pepper and spices.

Knead everything by hand to obtain a homogeneous composition. Soak your palms in oil and shape the meatballs to the right size.

Place them in a tray lined with baking paper. Sprinkle or grease them with a little olive oil (using a brush).

Let them bake in the hot oven for 15 minutes on one side, or until they are evenly browned, then turn them with a spatula and leave them for another 7-10 minutes.

Be careful when turning them over and transferring them to the tray, as they may scatter. If you want the paste to bind better, you can use a little chickpea flour or ground flax seeds soaked in water.

These meatballs can be served as such, with a vegetable salad, baked peppers, or as a garnish for puree, rice or other dishes.

Buckwheat and potato meatballs, cooked in the oven

I was telling you when I wrote the buckwheat risotto recipe (see here) that I soaked 500 grams of buckwheat from which I prepared a bunch of food. I made that risotto, I put it in a soup instead of rice, I also made a tray full of these meatballs, and even a quick dessert.

As I liked everything I prepared from soaked buckwheat, I decided to pose to post the recipes on the blog. As we are going through a more difficult period these days, I hope that these buckwheat recipes will help you cook tasty dishes using ingredients that (I hope) are still in stores.

It is unlikely that all the buckwheat stocks in stores have run out, as happened with the flour and yeast that have now disappeared from the market. Buckwheat is less cooked in our country. A lot of people turn up their noses when they hear about it. Even I thought the same thing until recently when I got used to trying to cook it in such a way that it was to my taste. And I succeeded, I say.

Maybe this combination of buckwheat and potatoes seems a little strange, maybe some will say that the combination is not ok. I wouldn't know what to tell you about this. But I can tell you for sure that they are tasty. And the fact that they are baked makes them, I say, a healthy choice.

Initially I was going to make this fasting recipe but the composition was too wet and did not bind so I found the solution by adding 2 eggs. I didn't have a vegan egg substitute on hand, but if you want to fast, you can try replacing the egg with chickpea flour, for example. Or flax seeds, chia etc.

The ones we ate at the monastery were fried in oil, but the nuns told us that if they have a holiday or are waiting for more guests, they make them in the oven, because it's easier for them.

It is the ideal recipe if you have some 3-4 tablespoons of scordolea (recipe here) or mashed potatoes that no one eats, or if you keep boiling potatoes for a salad, you can put 2-3 in plus for these meatballs.

They are easy to make and do not need any & # 8220liant & # 8221, they just need boiled potato and also boiled rice. They are soft, golden, tasty, fragrant.

They are also very good when they are hot, but we like them better after they cool down. We eat them for lunch or dinner with a salad or for breakfast with some olives or cherry tomatoes.
